CARROT ROAST

Perfect for a winter feast, carrots are packed with nutrients like beta carotene and vitamin C.
1 1/2 cups grated carrots
2 tablespoons chopped onion
1 cup cooked brown rice
1 cup shredded cheese
2 eggs, beaten (or egg substitute)
1 tablespoon margarine, softened
1/2 teaspoon salt
Pepper to taste
Preheat oven to 350 degrees.
Combine all ingredients in bowl; mix well.
Pour into greased 2-quart baking dish.
Bake at 350 degrees for 45 minutes.
